Oxtail with wild mushrooms

This time we present a traditional dish, elaborated with the best ingredients for everybody to taste.



- 1 kg oxtail
- 1 glass of red wine
- 1 tbsp balsamic vinegar
- 100 g. fresh and dried mushrooms
- 3 onions
- 1 head of garlic
- 1 bay leaf
- 25 g. dark chocolate drops or squares


Season the oxtail, roll it in flour and then sauté. Remove the oxtail, reserving the oil, and place it in a pot. Cook the oxtail with the wine, balsamic vinegar and mushrooms and then cover with water and simmer for around 3 hours until tender. Sauté the onion, the garlic and the bay leaf in the oil from the oxtail, caramelising it with the chocolate drops, then add to the oxtail pot and cook for another 10 minutes.
