Crispy suckling pig with sour apple cream

The perfect couple

This crispy piglet goes perfectly with the delicate acidity of the apple. These are bites of heaven on earth! The recipe is for eight people.
1 piglet of about four kilos, 3 Granny Smith apples, oil, salt, butter and sugar.
First, chop the pork and put it on ration vacuum bags with oil and salt to bake in the oven with 100% steam at 70 degrees for 24 hours. Then, open the bags and reserve on the cold room. Peel and chop the apples, add the butter and sugar in the Thermomix on heat for 10 minutes at speed 4. In the absence of a Thermomix, you can prepare the applesauce the traditional way. Debone the piglet and toast it in the oven at high temperature. Then plate up with a tear of applesauce, the crispy pork aside and a bit of gravy.
